In a cold pasta salad, the key to picnic perfection is actually overcooking the pasta a bit. While you may be used to boiling it until al dente, this time, you’re going to keep it in the pan a little longer. Trust us on this one.
This cannabis pesto pasta salad is easy but impressive, and it’s delicious at any temperature. The extra kick of THC (munchies, anyone?) certainly doesn’t hurt.
Cannabis Pesto Pasta Salad
Large mixing bowl
Ingredients for the cannabis pesto:
½ cup hulled hemp seeds (available online or at health food stores)
2 tbsp lemon juice
½ tsp maple syrup
½ tsp salt (sea salt is best)
½ tsp black pepper (freshly-ground is best)
2 cups fresh basil leaves
¼ cup OG Garlic Olive Oil
¼ cup parmesan (grated)
Optional – red pepper flakes to taste
Ingredients for the pasta salad:
2 cups fusilli pasta
2 pints cherry tomatoes
1 large ball of mozzarella cheese
3 cups fresh spinach leaves, packed
Salt (sea salt is best)
Black pepper (freshly-ground is best)
To make the cannabis pesto:
Add the hemp seeds, lemon juice, maple syrup, salt, and pepper to the food processor, and pulse until well-combined. Add the basil and let the machine run as you slowly pour in the OG Garlic Olive Oil. Stir in the parmesan cheese and red pepper flakes, if using. If the pesto is too thick, you can add more of the cannabis olive oil and continue to pulse.
For the cannabis pasta salad:
Fill a large pot with water and salt heavily, then bring to a boil.
Cook the pasta according to the package instructions, adding an extra 2 minutes to the cook time. Once cooked, use the colander to drain the pasta, then rinse with cool water and add to the large mixing bowl.
Cut the cherry tomatoes into halves or quarters, then salt lightly and set aside. Dice the mozzarella. Add the tomatoes, mozzarella, and spinach to the mixing bowl.
Add salt and fresh black pepper to the bowl as you stir, then pour in the cannabis pesto. Enjoy immediately, or chill in the fridge for tomorrow.
