Cannabis Queso Dip
Serves 2–3 people (or 1 cannabis lover with serious munchies)
Ingredients:
1 tbsp cannabutter
¼ onion (any)
2 jalapeños
2 cloves garlic
1 tbsp flour
½ cup heavy whipping cream
3 sprigs fresh cilantro
½ cup canned tomatoes
6 oz cheddar cheese
6 oz pepper jack cheese
¼ cup Greek yogurt or sour cream
Salt
Black pepper (fresh-ground is best)
Melt the cannabutter in a saucepan on low heat. Dice the onion and jalapeños, then add to the saucepan and stir until the onions are translucent.
Dice the garlic and add to the saucepan, stirring for another minute. Add the flour and continue to stir until the mixture is smooth. Add the heavy cream and whisk until the sauce is thick (around 5 minutes). Dice the cilantro and canned tomatoes, then stir them into the mixture.
Dice the cheese. To combine, add a small amount at a time, stirring continuously until the mixture is smooth before adding more.
Stir in the Greek yogurt (or sour cream). Add salt and pepper to taste.
To enjoy the cannabis queso, serve with tortilla chips or on top of baked potatoes.
