Cannabis Cheesecake Cookies With Rainbow Sprinkles

Inspired by Momofuku Milk Bar’s famous Celebration Cake, we’re creating something new. This recipe combines classic Milk Bar mainstays like cheesecake and rainbow sprinkles, then adds cannabis for a special kick.

This recipe (adapted from The Kitchn) makes 24 cookies. You will need:

Ingredients:

1 ½ cups flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup cannabutter, softened
4 oz cream cheese, softened
1 cup granulated sugar
1 egg
1 tsp lemon juice
¼ cup rainbow sprinkles
¼ cup powdered sugar

Equipment:

Medium mixing bowl
Large mixing bowl
Whisk
Electric mixer
2 baking sheets

Add the flour, baking powder, baking soda, and salt to your medium bowl. Whisk to combine.

Add the cannabutter, cream cheese, and granulated sugar to your large bowl. Use the electric mixer to beat it on medium speed for 2 minutes until the mixture is light and creamy.

Add the egg and vanilla. Use the electric mixer to beat the mixture on low speed.

Add the dry mixture from your medium-sized bowl and beat on low speed until fully combined. Fold in the rainbow sprinkles.

Place the dough mixture in your refrigerator for at least half an hour.

Line both baking sheets. Roll the cookie dough into balls, using around 1 ½ tbsp of dough per ball.

Bake for 10 minutes at 350F.

Let cool, then dust with powdered sugar.

Cannabis & Coffee Sandwich Cookies

We were inspired to find a great pairing for Christina Tosi’s coffee frosting recipe from Momofuku Milk Bar: A Cookbook. The recipes in her cookbooks are usually pretty expert-level, so even though this frosting is easy to make, the cake she recommended it go on was… not. We decided to infuse it with cannabis, then squash it between two tasty coffee cookies (with just a bit of THC) for a deliciously caffeinated treat.

For the coffee cookies, you will need:

Ingredients:

2 sticks butter, softened
1 ¼ cups granulated sugar
1 egg
2 tsp vanilla extract
½ tsp of your favorite cannabis tincture
2 tbsp instant coffee
1 tsp baking soda
½ tsp salt
2 cups flour

Equipment:

Large mixing bowl
Electric mixer

Add the butter and sugar to your mixing bowl. Use the electric mixer to beat it on medium speed until creamy and fluffy.

Add the egg, instant coffee, vanilla extract, cannabis tincture, baking soda, and salt. Use the electric mixer to beat on medium speed until well-combined.

Fold in the flour by hand until it is combined with the rest of the mixture.

Refrigerate the dough overnight.

Roll the cookie dough into balls, using around 1 tbsp of dough per ball.

Bake for 15 minutes at 350F, then let cool.

To make the cannabis coffee frosting, you will need:

Ingredients:

½ cup cannabutter
¼ cup powdered sugar
¼ cup milk
¾ tsp instant coffee
¼ tsp kosher salt

Equipment:

Large bowl
Electric mixer
Small bowl
Whisk

Add the cannabutter and powdered sugar to your large bowl. Use the electric mixer to cream them together on medium-high speed.

Add the milk, instant coffee, and salt to the small bowl. Whisk together.

Slowly pour the coffee mixture into the large bowl as you beat it with the electric mixer on low speed. Once it is fully incorporated, spread the cannabis frosting on your cooled coffee cookies and sandwich them together.

Enjoy with a latte, a pre-roll, black coffee, or a cold glass of milk—it’s up to you.
